Pasta & Avocado Salad

Ingredients

  • 250 g Cooked spiral pasta (or scallop or elbow)
  • 2 Avocados, chopped
  • ½ Cup finely chopped fresh basil
  • 1 Dessert spoon capers
  • 2 Large tomatoes, chopped
  • 4 Shallots, chopped
  • ¼ Cup finely chopped parsley

Red Wine Vinegar Dressing

  • ¼ – ½ Cup olive oil
  • 1/3 Cup Red wine vinegar
  • 1 Heaped teaspoon tomato paste
  • 2 Tablespoons chives, chopped
  • Salt and freshly ground pepper
  • Combine in a jar and shake well.

Salad

  • Toss all ingredients together with prepared dressing and serve.
