Italian Avocado Salad

Serves 4-6

INGREDIENTS:

  • 4 Ripe avocados, peeled
  • 100g Cherry tomotoes, washed
  • 100g Artichokes
  • 100g Olives
  • 200g Mozzarella cheese
  • 30g flat leaf parsley

PREPARATION:

  1. Cut the avocado into chunks and arrange on a serving platter,
  2. Tear the mozzarella balls into pieces, toss with the remaining ingredients and combine with avocado on the platter.
  3. Drizzle with olive oil, season with sea salt and freshly ground black pepper.
  4. Serve immediately.
