Herby Avocado Salad

Serves 4-6

SALAD INGREDIENTS:

  • 6 Large ripe avocados, peeled and quartered

DRESSING INGREDIENTS:

  • 30g Italian parsley
  • 30g Chives
  • 6 Spring onions
  • 1/4 Cup lemon juice
  • 1/2 Cup olive oil
  • 1 Tablespoon wholegrain mustard

PREPARATIONS:

  1. Combine all the dressing ingredients in a food processor.
  2. Toss the avocado with the dressing and arrange on a platter.
  3. Season with sea salt and freshly ground black pepper, serve immediately.
