Avocado on Toast



  • 1 ripe Summer avocado
  • 1 tsp lemon juice
  • pinch of sea salt
  • drizzle of balsamic vinegar
  • 2 thick slices multi seeded bread
  • freshly ground black pepper


  • Mash or slice the flesh of the avocado in a large bowl with the lemon juice and add a pinch of sea salt and a drizzle of balsamic vinegar.
  • Lightly toast the bread.
  • Spread the avocado thickly on top and add plenty of black pepper.
  • Eat at once!
