Beef strips, prawns or tofu can be substituted for the chicken.
- 2 Avocados, halved and sliced
- 200g Assorted veggies: mange tout, baby corn, broccoli spears, carrot batons, bean sprouts
- 2 Chicken breasts, cooked
- 200g Egg noodles, cooked
- 1/2 Cup sweet chilli sauce
- 1/4 Cup lemon juice
- 2 Tablespoons fish sauce
- 2 Tablespoons castor sugar
- 2 Tablespoons sesame oil
- Mix all the dressing ingredients together well.
- Toss the salad ingredients together in a large bowl with the dressing until well coated.
- Serve in bowls garnished with seeds and sprouts.
