Avocado & Sweet Chilli Noodle Salad

Beef strips, prawns or tofu can be substituted for the chicken.

Serves 4

INGREDIENTS:

  • 2 Avocados, halved and sliced
  • 200g Assorted veggies: mange tout, baby corn, broccoli spears, carrot batons, bean sprouts
  • 2 Chicken breasts, cooked
  • 200g Egg noodles, cooked

DRESSING

  • 1/2 Cup sweet chilli sauce
  • 1/4 Cup lemon juice
  • 2 Tablespoons fish sauce
  • 2 Tablespoons castor sugar
  • 2 Tablespoons sesame oil

PREPARATION:

  1. Mix all the dressing ingredients together well.
  2. Toss the salad ingredients together in a large bowl with the dressing until well coated.
  3. Serve in bowls garnished with seeds and sprouts.
