Avocado Pasta with chorizo and olives

Ingredients

  • 300g whole-wheat penne pasta
  • 10 sundried tomatoes drained
  • 10 olives, de-stoned
  • 200g chorizo sausage, sliced and fried
  • 100g parmesan cheese, cubed
  • 1 avocado, peeled, stoned and cut into cubes

Preparation

  • Cook pasta according to instructions on-pack.
  • Drain pasta and toss gently with remaining ingredients.
  • Serve in bowls with chunks of bread and extra grated parmesan cheese.
