- 300g whole-wheat penne pasta
- 10 sundried tomatoes drained
- 10 olives, de-stoned
- 200g chorizo sausage, sliced and fried
- 100g parmesan cheese, cubed
- 1 avocado, peeled, stoned and cut into cubes
- Cook pasta according to instructions on-pack.
- Drain pasta and toss gently with remaining ingredients.
- Serve in bowls with chunks of bread and extra grated parmesan cheese.
