Avocado and Sweet Chilli Noodle Salad

Beef strips, prawns or tofu can be substituted for the chicken
Serves: 4

Ingredients

  • 2 avocados, halved and sliced
  • 200g assorted veggies: mange tout, baby corn, broccoli spears, carrot batons, bean sprouts
  • 2 chicken breasts, cooked
  • 200g egg noodles, cooked

Dressing

  • ½ cup sweet chilli sauce
  • ¼ cup lemon juice
  • 2 tablespoons fish sauce
  • 2 tablespoons castor sugar
  • 2 tablespoons sesame oil

Preparation

  • Mix all the dressing ingredients together well.
  • Toss the salad ingredients together in a large bowl with the dressing until well coated.
  • Serve in bowls garnished with seeds and sprouts
