Beef strips, prawns or tofu can be substituted for the chicken
- 2 avocados, halved and sliced
- 200g assorted veggies: mange tout, baby corn, broccoli spears, carrot batons, bean sprouts
- 2 chicken breasts, cooked
- 200g egg noodles, cooked
- ½ cup sweet chilli sauce
- ¼ cup lemon juice
- 2 tablespoons fish sauce
- 2 tablespoons castor sugar
- 2 tablespoons sesame oil
- Mix all the dressing ingredients together well.
- Toss the salad ingredients together in a large bowl with the dressing until well coated.
- Serve in bowls garnished with seeds and sprouts
