Avo Ritz Revamp Chicken Tikka with Celery & Almonds

INGREDIENTS:

  • 1 Large ripe avocado, halved and de-stoned
  • 2 Chicken breasts, cooked and diced
  • 1 Stick celery, sliced
  • 1 Tablespoon curry paste
  • 1/4 Cup mayonnaise or low fat dressing
  • 1 Tablespoon lemon juice
  • Toasted almonds to garnish

PREPARATION:

  1. Combine all ingredients and fill avocado halves
  2. Garnish with toasted almonds and serve immediately.
